Pesto is actually super easy to make and it is one of my favourite things. I literally go pesto on everything, so learning how to make this Italian number at home is one of my favourite achievements thus far.
I recently made some creamy pesto chicken pasta and it was off the hook. Since my pesto was so good, I have decided to share my recipe with you.
2 cups fresh basil leaves
2 garlic cloves
1/4 cups pine nuts
1/3 grated parmesan
2/3 cups olive oil
Salt and pepper to taste.
In a food processor/blender, combine basil and pine nuts and pulse a few times
Add garlic cloves and parmesan and pulse some more
Gradually add in olive oil and pulse till smooth paste forms.
Season pesto with salt and pepper to taste.
Alternatively, you can add all ingredients to blender at once and pulse.
