Foodie Weekend: Turkey meatball sauce

Yaaay, Its the weekend people! Time to really sleep in and do nothing for the first few hours or not.

I’m not sure why, but sleeping in has not always worked for me, I guess my brain has a mind of its own. So I like to learn something new and today its how to prepare the classic Italian turkey meatball sauce, because turkey is yum yum, so I did some research.

Here are two separate recipes, one a little complicated because sometimes complicated recipes makes good for first timers and another simple one cause heck who doesn’t prefer the simpler things in life.

RECIPE 1

Ingredients:

  • 1 cup plain bread cumbs
  • 1/2 cup grated parmesan, plus more for serving
  • 1/4 cup fresh chopped basil
  • 1/4 cup fresh chopped Italian parsley
  • 1/4 cup whole milk at room temperature
  • 1 tablespoon ketchup, optional
  • 1 tablespoon tomato paste
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large eggs at room temperature
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 pound ground dark turkey meat
  • 1 pond spicyIitalian turkey sausage links, casings removed
  • 1/4 Extra virgin olive oil for drizzling

Sauce:

  • 1/4 cup extra virginoil
  • 3 large cloves garlic, smashed and pilled
  • 1 large onion, finely chopped. 1 teaspoon kosher salt, plus more to season
  • 3/4 cup chopped fresh basil
  • 2 teaspoons finely ground fennel seeds
  • 2 teaspoons dried oregano
  • 2 twenty-eight ounce cans of crushed tomatoes
  • 1/2 cup low sodium chicken broth

Recipe 2

Ingredients

  • 4 spring onions (washed and sliced)
  • 1 small red onion (finely chopped)
  • 4 small carrots (sliced)
  • 2 English potatoes (cubed)
  • Bell peppers (red and green, chopped)
  • Fried turkey meatballs
  • 2 tablespoons coconut oil
  • 1 cup meat stock
  • salt to taste
  • 1 tablespoon cornflour
  • 1/4 cup water
